Huacatay (pronounced Wa-ka-tay) is an edible leaf marigold. Used as an aromatic herb in Peru in various traditional dishes. It is also known as Peruvian black mint, mint marigold, or Mexican marigold. It has a pungent aroma and flavor, with a hint of lime, tarragon, licorice, and mint. Traditionally fresh leaves are used to to make a green sauce with aji peppers and served over potatoes. We made a huacatay pesto and served it with fried potatoes. Superb!
Grows 6-8 ft tall bushes with green frilly leaves that form yellow blossoms. Dried leaves can be used as a spice or a very satisfying herbal tea. It has become a mainstay of our winter tea concoctions. Plant in full sun, 12” between plants.
